The filet mignon is a 2” thick steak cut from tenderloin, which is a lean muscle that runs along the inside of the spine atop the ribs. It is one of the least used muscles on the animal which makes it extra tender.
Filet mignon is wonderful when cooked hot and fast to a temperature in between 125° and 135°. It’s a great steak to sous vide to a perfect temperature before searing.
Each Red House Ranch filet mignon package weighs about half a pound and contains two steaks.
