Red House Ranch Capicola
At Red House Ranch, we believe the best food starts with the way it’s raised.
Our capicola is crafted from our own pasture-raised hogs, using the traditional Copa cut, a shoulder muscle revered for its rich marbling and deep, savory pork flavor. Each piece is carefully bathed in red wine, rubbed with a rustic blend of spices, and kissed with Calabrian hot chili powder for a gentle heat that lingers without overpowering.
Marinated for 28 days, the Copa is then left to hang and slowly age in our own curing chamber.
Over time, the flavors deepen, the texture softens, and the natural fat develops into silky ribbons that melt on the tongue. The result is a capicola that’s rustic yet refined—a true reflection of our land, our animals, and the time-honored craft of curing meat by hand.
Savor it on its own, lay it across a crusty loaf with cheese, or pair it with a glass of red wine—it’s the kind of food meant to be shared, celebrated, and enjoyed slowly.

With Frozen Meat Orders: If you’re already ordering frozen meat, we’ll include your charcuterie in the same box at no extra cost.
Charcuterie Only Orders: No need to meet our $199 order minimum.
