Pig feet, also known as trotters, are the fully cleaned, skin-on foot of the hog. The foot mostly consists of skin, bones, and connective tissue though there is also a bit of meat in them. When cooked down they release large amounts of gelatin, which makes them an ideal addition to stocks, broths, and soups.
