Speaking of great burgers, one of our favorite chefs is Matty Matheson. He makes a cheeseburger topped with Bacon-Onion Jam. It's incredibly delicious and adds a new dimension to any burger or cut of beef.

We've made this many times and love it. On House Blend or our regular Ground Beef, Matty Matheson's Bacon Onion Jam is so good we had to share it with you. The recipe is easy and the jam keeps in the fridge.

Here's the recipe:

Matty Matheson's Bacon-Onion Jam

1 Pound slab bacon sliced into lardons

2 Cups unsalted butter

4 Pounds onions, sliced

1 Cup red wine vinegar

1/4 Cup sugar

Directions:

  1. In a large heavy-bottomed pot set over medium heat, render the bacon.
  2. Add the butter and onions.
  3. Cook over low heat, stirring occasionally about 90 minutes.
  4. Add the vinegar and sugar to the pot and cook 15 more minutes. Remove from heat.
  5. Let cool and place in container and store in the fridge til you're ready to top your burgers with jam.
