We recommend slow roasting chicken thighs until the skin is crispy and the internal temperature registers 170° or 180° near the bone. Cooking to a higher internal temperature than the minimum recommended for food safety ensures that the muscle fibers have time to break down and become nice and tender.
These are very special gourmet chickens. They are called Red Rangers. They perform better on pasture than the classic white leghorn birds that everyone else raises. These birds take longer to raise and they are absolutely delicious and they are difficult to find.
