This is pork at its best. A full two inches thick with a generous fat cap left intact, our double cut pork chop is the kind of chop you’d expect to find at a great restaurant—not the grocery store.

Cut from the loin, this chop delivers the perfect balance of tender meat and rich, flavorful fat. That half-inch rim renders slowly as it cooks, basting the chop from the outside in and creating a deep, savory crust when finished over high heat.

As with all our pork, these chops come from pasture-raised, heritage breed hogs—raised outdoors in fresh air and sunshine, never confined, and never given routine antibiotics, growth hormones, or vaccines. (HELL NO)! 

They’re fed a clean, non-GMO, corn-free mix of wheat, barley, and toasted soybeans, resulting in pork with real flavor old fashioned pork flavor. 

Cook it like a steak. Grill hot and finish over indirect heat, reverse sear, or sous vide and finish in a hot pan or over fire. However you approach it, give it the attention it deserves and avoid overcooking - keep your instant read thermometer handy.
