If you're new to cooking lamb, sirloin chops are a great place to start. These individual chops are tender, nicely marbled, and full of the clean, distinctive flavor of local, raised right here in New York, grass fed lamb.
Our lamb comes from Outryder Farm, a nearby family farm owned and operated by Lawrence Flick and Liv Wogan. Their flock of Katahdin hair sheep is 100% grass-fed and grass-finished and rotationally grazed on pasture and silvopasture. The sheep are moved to fresh pasture daily, with grazing practices designed to improve both animal health and the health of the land.
Lamb sirloin chops cook quickly, making them an easy choice for a weeknight dinner or a more leisurely meal. Keep the preparation simple: a little olive oil, salt, pepper, garlic, fresh herbs are all you need. Grill, pan-sear, or broil until nicely browned on the outside and cooked to your liking.
They're especially good with rosemary, garlic, lemon, mint, or a simple yogurt sauce.
