Chris Mallula's Gluten Free Meat Loaf
Old fashioned meatloaf is one our family favorites. Delicious the moment it comes out of the oven as well as the next day. Better make extra because leftover meatloaf seems to make everyone happy. Here at Red House Ranch we eat a high protein, low carb diet; so we say hold the mashed potatoes and serve this with a generous serving of green beans, or an arugula salad.

Ingredients

  • (2 Pounds) Ground Pork
  • (About 3/4 Cup) 1 Medium Onion Finely Chopped
  • (1 Tsp Salt and 1/2 Tsp Pepper) Salt and Pepper
  • (2 Tablespoons) Ketchup
  • (1/4 Cup) Milk or Broth
  • (1/2 C Oatmeal) Oatmeal
  • (2) Eggs
  • (6-8 Strips - enough to cover entire loaf in a single layer) American-Style Side Bacon, Hickory Smoked

Directions

Meatloaf often calls for breadcrumbs. To keep this gluten free I've substituted organic oatmeal. I prefer ground pork alone, but you can make this with beef or equal parts ground beef and ground pork. 

  1. Preheat oven to 350.
  2. Combine all ingredients except bacon in mixing bowl. Mix until well combined.
  3. Pour into a bread loaf pan and smooth the top.
  4. Arrange bacon slices over top of meatloaf.
  5. Bake for about 50 minutes. Bacon should be nicely browned. Let rest for 10 - 15 minutes before serving.
