Matty Matheson's Bacon Onion Jam
From renowned Canadian Chef, Matty Matheson - here's his recipe for a slow-cooked combination of pasture raised bacon, onions, vinegar, butter and just a bit of sugar (you could easily exclude the sugar) to top your burgers or favorite grass fed beef cuts. We've made this many times and love it - hope you will, too.

Ingredients

Directions

  1. In a large heavy-bottomed pot set over medium heat, dice and render the bacon.
  2. Add the butter and onions to the same pan (we use less butter...about 1 cup).
  3. Cook over low heat, stirring occasionally about 90 minutes.
  4. Add the vinegar and sugar to the pot and cook 15 more minutes. Remove from heat.
  5. Let your jam cool. Place in container and store in the fridge until you're ready to top your burgers with savory onion jam.
  6. Order or pick up our delicious grass fed ground beef, House Blend ground beef, or ground beef patties for the best burgers.

Honestly, all our ground beef is delicious, nutritious, grass fed and finished right here on the pristine pastures of our family farm. But, our absolute favorite for burgers topped with Onion Jam is House Blend ground beef. A special grind made only from brisket, short ribs and chuck, House Blend ground beef delivers the flavor and texture of these three delicious cuts directly to your burger.

Try House Blend ground beef today and taste the difference!

Note - Here at the farm we eat a largely Keto diet and do not add the sugar in this recipe. 4 pounds of carmelized onions are pretty sweet all on their own. We suggest adding a tablespoon of Maple Syrup at the end to sweeten to your taste.
